Im going with Holmes. It's the best pure collaboration.
Sardy was brought in to doctor and press record. Sitek did a fine job, but most of it was him adding on sections that he'd written to the end of songs. It doesnt actually feel like a collaboration, especially when it's clear where a Beady Eye begins and where a Sitek song takes over.
Holmes is the happy medium between the two imo.

I went with Holmes.
Sardy did a great job on DBTT. I think that album sounds great and his production suits the album. When we moved on to DOYS it became apparent that his approach was quite limited. Although if the songs are good its difficult for him to ruin them (see Bag it Up, Falling Down, Everybody's on the Run), if DOYS was just Noel tunes there'd be a better album there. See NGHFB.
Sitek didn't get a chance to work with competent songwriters so it's probably harsh to judge him. Nobody could have salvaged BE.

David Holmes by some massive distance. Agree with Lord Vadar, Sitek is talented, but there’s only so much you can do with songs from the ex Heavy Stereo frontman for example.

Holmes is actually a really good artist in his own right, The Holy Pictures is a really good album. Plus, his work on Who Built the Moon? is incredible, not just from a production point of view, but in getting Noel to be creative in an entirely new way.
Sardy, on the other hand...

Part of me is wondering how 9 people voted for Sitek... but who's the one who voted for Sardy? I voted for sitek. I know the question was specifically about there work with gallaghers but im not a fan of Holmes and really love some of Siteks work with TV.. and Yeah Yeah Yeahs, so he was my choice of the three. No idea what sardy brings to an album, even after listening to DBTT and DOYS.

I think Sardy is lucky in terms of the albums he has happened to work on have all had success.
I think Noel has put this success down to him rather than the many other elements.
Flick Of The Finger is still one of my favourite songs from either Gallagher since Oasis despite the "lack of competent writers" yawn.

Sitek and Holmes are neck&neck and Sardy is way behind.
Edit. I'm grateful that Sardy worked on DBTT and saved the band(Even if he didnt produced Lyla and Idle). But Sitek and Holmes pushed Liam and Noel, they did songs that otherwise wouldnt have been done the old way(Flick and Soul love for Liam and TMWBTM and Fort Knox for Noel). I'd love to see Liam working with Holmes and Noel working with Sitek, but I know that won't happen until hell frezees.😂

Its Holmes.
Sardy took the best songs and weakened them. Holmes took the second best songs and strengthened them. Sitek took the weakest songs and did what he could.
Sitek on DGSS and Holmes on NGHFB would have been nice...
