I'm going to do this as lazily as possible, look at the album for each era and see what wasn't played.
Definitely Maybe: Every song was played from the album and Whatever Single at some point in this era. Of the b-sides the following songs were NOT PLAYED in the tour. Alive (Demo), and Strange Thing-which was never officially released until a couple years ago.
(What's The Story) Morning Glory?: Nearly every song from this album was played live except for Hey Now! which we have a super short clip of Noel singing it from '06 but never heard of it being played anywhere, Bonehead's Bank Holiday and She's Electric, not played in this tour but played by Noel a few times in 2002. From the b-sides they were all almost played except for Step Out which wasn't until 2000, I think Underneath The Sky was only played once for the radio solo acoustic by Noel.
Be Here Now: I Hope, I Think, I Know is the only song from this album to have never been played live that we know of. Liam never sung The Girl In The Dirty Shirt or My Big Mouth in this tour Noel sung them both, but Liam did sing My Big Mouth in their final tour and in 1996 a couple times. Many b-sides have not been played at all from this release, The Fame, Flashbax, (I Got) The Fever, My Sister Lover, Street Fighting Man (Cover), and Going Nowhere.
Standing On The Shoulders Of Giants: Two songs weren't played from the album, Put Yer Money Where Yer Mouth Is and Roll It Over, Liam played Little James once acoustically on the radio. Almost all b-sides were not played live except for One Way Road a handful of times over the years and Helter Skelter.
Heathen Chemistry: Three songs weren't played from this album by Oasis, A Quick Peep, (Probably) All In The Mind and She Is Love. At Oasis' Royal Albert Hall gig in 2002 before the album release(?) All In The Mind was in the setlist but wasn't played. Andy did a couple acoustic sets in 2003 and played A Quick Peep and Thank You For The Good Times by himself. 4 of the b-sides were played live at least once, but we have no recording for Just Getting Older. Noel eventually played Idler's Dream in 2012, same with Shout It Out Loud in 2013. Heart of a Star was played once acoustically. Thank You For The Good Times was never played live.
Don't Believe The Truth: Two songs weren't played from this album, Part Of The Queue and Keep The Dream Alive. Let There Be Love was played once acoustically by Noel alone. Lord Don't Slow Me Down wasn't played until 2013. Not a single b-side has been played from this era.
Dig Out Your Soul: Five songs have not been played from this album, Bag It Up, The Turning, (Get Off Your) High Horse Lady, The Nature of Reality and Soldier On. The Alternate Version of The Turning on the bonus disc was soundchecked without vocals. All but one b-side was a remix of sorts, Those Swollen Hand Blues has never been played live, along with the bonus tracks, I Believe In All and Boy With The Blues.
Looking at the numbers Oasis have played 61 songs out of 75 from their album releases alone. I can't be bothered to count the total with b-sides.
Lets look at what Beady Eye and Noel have done in their 2 album cycles.
Different Gear, Still Speeding: The lads were very brave this time round, completely opting out of playing any Oasis songs, playing every song off the album and every b-side.
BE: This time they played some Oasis, but they still managed to play every album song. The only 2 tracks they never played was the Japan bonus tracks Evil Eye and Girls In Uniform. They technically played Dreaming Of Some Space with the Paris Bathroom Performance, you be the judge.
Of 35 songs total Beady Eye played 33.
They played 6 Oasis songs I think? Rock N Roll Star, Morning Glory, Cigarettes & Alcohol, Live Forever, Champagne Supernova, Wonderwall and Songbird. Cover wise they played Gimmie Shelter, Cry Baby Cry, Across The Universe and Blue Moon. (I included Sons Of The Stage with the album as it was part of the tracklist)
Noel Gallagher's High Flying Birds: Noel has technically played every song off the album, he has played Stop The Clocks a couple times in the Oasis days, but if it weren't for that then Stop The Clocks and I'd Pick You Everytime are the only songs he hasn't played. Noel used Shoot A Hole Into The Sun as his stage intro and didn't use the What A Life Remix for anything.
Chasing Yesterday: Noel has not played 2 songs from this album, Girl With X-Ray Eyes and The Right Stuff, he did play While The Song Remains The Same once but we don't have a recording of it. From the b-sides, Noel has not played 3 of them, Revolution Song, Birthday Cake and Leave My Guitar Alone.
Of 31 songs total Noel played 25.
Noel has played the following Oasis songs: (It's Good) To Be Free, Mucky Fingers, Supersonic, Wonderwall, Talk Tonight, Half The World Away, Whatever, Little By Little, Importance of Being Idle, Don't Look Back In Anger, The Masterplan, Fade Away, Champagne Supernova, Shout It Out Loud, Digsy's Dinner, Lord Don't Slow Me Down, Angel Child, Spaceman and if you wanna count it, before his solo debut at Teenage Cancer Trust 2010 he played Rockin' Chair.
Its 6AM, so let me know if I made any mistakes or anything. I feel like I did miss some numbers somewhere.

Liam sang My Big Mouth a couple of times in 1996 including Knebworth and Loch Lomond.
Andy played Thank You For The Good Times twice at solo shows and also A Quick Peep at least once too.
Stop the Clocks was only ever played at soundchecks. The Turning (alternate version) was also soundchecked by Noel and the band on the Dig Out Your Soul tour.
Beady Eye played Wonderwall at the Olympics 2012 and on the Australian leg of the BE tour I think?

Well remembered sir, right out of my head. I'll never forget it mainly because some super duper mega asshole franklomax held it hostage from the forum.

I fixed what was suggested. The biggest surprise for me looking at this was the Oasis songs Noels played, 19. That could be a set in itself. If he does what he says he will, that number won't go up by much as he plays more solo stuff. Noels talked about playing less Oasis songs as time went on, while Liam kept talking about playing more obscure stuff.

Wish Hey Now! could be played by either of them. Love Liam's vocal on that one but Noel singing "And as it fell from the sky/I asked myself why/Can I never let anyone in?" is special. It probably only happen if they'd reunite for a Morning Glory 25th anniversary tour kinda thing...I'm just dreaming.

Beady Eye played Columbia at least once in 2013 Wasn't that just a one-off, at the Jon Brookes memorial concert, as it was his favorite Oasis song?

I have no memory of making this long post and I'm in my mid 20s. Is this what happens to Oasis fans? Does the memory loss rub off on us? I'm sure they did enough drugs for all of us back then.

I think an update with Liam's setlists would be interesting, now that he's got a couple of solo albums and tours under his belt. He's hit quite a lot of Oasis songs in the relatively short time he's been touring.

To update this, Noel played The Right Stuff during the WBTM? era (did so on a World Cafe performance that I remember) and While the Song Remains the Same for a Netflix performance.
