Was watching the election coverage on a station (who think swimming is the only sport in the Olympics), and I am still confused to what the animals representing both sides mean. What if anything?

I learned in PoliSci it was from old political cartoons in the late 19th century.
A republican candidate called a Dem a Jackass and the Dem embraced the insult. He put it on his election posters and everything. Eventually the donkey was used to portray many democrats. Later a Republican political cartoonist started using the donkey to represent the Dems and the Elephant to represent the Republicans in several cartoons. It just caught on.
