Noel said he got the name from the Jefferson Airplane song. Jefferson Airplane performed it but it was originally a folk song by Billy Edd Wheeler. The song was covered a lot on the folk circuit int he early 1960s.
I'm reading a book about The Buffalo Springfield. Here is a quote from Neil Young about his early days on the scene when he was trying to make it. It was about when he say Stephen Stills perform 'High Flying Bird' with his musical group of the time at a club.
"Stills sang it [High Flying Bird] and he really sang it well. So we started doing our version of it. People started telling us how well we did that song, so we started calling ourselves the High Flying Birds."
Now, in an interview last year, when Noel was asked who he wanted to patern his career after, he said it was his friend 'Neil Young.'
I'm wondering as part of his admiration for the man, he actually named his session band, 'High Flying Birds' because that is what Neil Young briefly called his band.

could be. noel is obsessed with his favourite groups and artists. it would had been a big surprise back then when noel announced his new project when there weren't been a reference to his idols

i think the neil young thing is accurate
and stating the obvious I think high flying birds bodes well for noel envisaged a successful solo career, but wouldnt bode so well if the album flopped miserably

I'm not saying he's lying. I'm sure he's probably accurate in what he's saying. I'm sure hearing the Jefferson Airplane version triggered him, but if he was aware that his friend Neil Young briefly called an obscure band of his 'High Flying Birds' after the song, it may have factored into the decision. It's probably just a coincidence but I found it interesting that 'High Flying Birds' was so influential to Neil.

The same reason why he lies about how Liam thought up the name 'Oasis'; because it's a better story to tell in interviews.

Because the best name for a band - Beady Eye - had already been taken, so he chose an alternative which looks ridiculous in comparison.

The NY theory actually seems rather plausible. I doubt he would ever admit to it, but im sure there was some influence going on there

But I do believe Noel when he said that he was first inspired by Peter Green's Fleetwood Mac and then Jefferson Airplane. Noel is a really big fan of Fleetwood Mac. So much so that when asked which guitarist inspired him most he said Lindsey Buckingham. So I think Noel is a pretty big Mac fan in general and it wouldn't surprise me if it wasn't completely about Macca. I just think that some like to go with the simplest explanation. But I think that there were multiple factors of him choosing the name, rather than one defining reason.

That he named the HFB because Macca had a band called Wings and Birds have wings.
The principle of having both his name and a band name in there is obviously inspired by a multitude of artists who have done the same including Macca.

Yep Neil young and the Crazy horse, Ryan Adams and The cardinals, Bruce S and the E street Band, the list goes on and on, it wasn't just Fleetwood Mac that inspired him IMO. As for High flying bird, the NY explanation seems reallly possible, thanks for the info.
