When copying a CD on to itunes, does it convert the songs into MP3 files?

No mate, it will import them as aac files. if you want them as mp3s click on edit then select preferences. A window will open up and about half way down it says "import settings".
Another window will open, where it says import settings use the drop down menu and select mp3 incoder then at setting select higher quality 192kbps or custom which will allow you to select a higher bitrate, 224-320kbps. You can choose variable bit rate by clicking the tick box or keep it constant. Then just click OK.

^ So when I import, it shouldn't have decreased sound quality because it hasn't been converted to mp3? It's just because I hear mp3 is poorer quality, and I don't want my songs sounding like that.

If you want to maintan the quality then import the tracks as vbr 224-320kbps mp3's, they are around about the same quality as aac files and there will be no decrease in sound quality.
I personally import them as vbr mp3 and the quality is as good as it gets for an mp3.
