Totally unable to work out how to reply @madforliam Following your "professional recording" thinking, I'd add Manchester '05 and iTunes '09. They might not reach previous heights but they do round out the story.

Can’t pick one. Too many contenders all for different reasons.
I’ll go with Maine Road. But GMEX is also highly valued. And are others. Again, for differing reasons.

I feel like the this is such a casual list. I've been getting into trawling through Oasis gigs and am wondering how on earth has no one mentioned Sheffield Arena in 1995 yet?
It has so many things going for it: 1) A fantastic setlist - made up of the best of the usual suspects of Definitely Maybe along with some really nice rare b side choices in (It's Good) To Be Free and Take Me Away and the entirety of the Some Might Say single. It also features a cool transition from Cigarettes & Alcohol into Married With Children.
2) Significance - it is the last gig Tony played with the band, the band's first arena show and (most importantly) the first time Don't Look Back in Anger is revealed to the public.
3) Liam's Performance - it is quite possibly his best vocal perforamnce with the signature vocal style he developed (post early 1994). He's going for all the high notes in the songs, and hits them with good grit and intensity without without cracking once. Rock 'n' Roll Star, Columbia and Slide Away in particular are incendiary performances and among the best I have ever heard. He's also clearly having a lot of fun, engaging with the crowd and making an active effort to get the crowd involved. This is something that seemed to disappear after the Knebworth shows, he got a bit lazy as a frontman.
I see a lot of people mentioning Live By the Sea but, this Sheffield gig is basically the superior version. Much like with Roskilde and Glastonbury later in the year, the better recorded gig, overshadows the better performed gig. This gig deserves a lot more recognition.

Maine Road for me. Oasis in their hometown and stadium. I bought There and Then live VHS in 96 and it hit me like a thousand volts. There was no internet back then and that was the first time I experienced and heard Oasis live. Of course Earl's Court is absolutely mega too and it's on the same VHS/DVD, but Maine Road is still the best one.

Manchester Apollo 2001 (10YN&C) Actually, Barrowlands is probably objectively better because Noel did Octopus’ Garden rather than All the Young Dudes

Y'all are forgetting the best one in this poll: Gleneagles 1994. The spirit of Definitely Maybe never sounded more alive than at that gig.

I went for Maine Road from that list, but my favourite gig of theirs ever is probably Sheffield 23rd Sept 1997
