Could someone explain to me the reason for doing these sound checks with unreleased material? Is it just to see how it sounds in that setting? If it's to dial in the equipment I would think they would check songs listed for the set.

It's just a chance for Noel to informally play whatever he feels like at the time. He's not really playing for an audience there, so he can do whatever. Sometimes he does a few covers at soundchecks too.

He could have just been playing for himself while waiting for the sound guys to do something unrelated. They aren't soundchecking his instrument or mic all the time.
There are videos of him circa 2002 strumming away and singing Strawberry Fields Forever before soundchecking LBL for the Letterman show. It's probably a bit like that.

On the last Oasis tour, he even soundchecked songs people thought he forgot about, like Hey Now!
And here's one of him soundchecking Like A Rolling Stone by Bob Dylan.
I wish he did a proper cover of this and released it. Sounds brilliant.
