New chili recipe - this is my fav Bowl of Fire 2 lbs red beans 3 lbs ground beef 1/4 cup olive oil 1 1/2 quarts water 8 red dry chili pods (or sub 3 tbsp. chili powder and 3 tbsp cayenne) 3 tsp salt 10 cloves garlic (chopped fine) 2 tsp grounf cumin 2 tsp oregano 1 tbsp sugar 3 tbsp paprika 3 tbsp flour 6 tbsp corn meal Use red beans (not kidneys) and soak overnight. Doil the next morning (or evening) until tender and drain. Add cooked beans to cooked chili (this is a must) Braise meat in olive oil until it turns grey (not brown) Add water and simmer 1 1/2 hours. Add all ingredients EXCEPT flour and cornmeal. Cook 30 minutes more. Then thicken woth flour and cornmeal mixed with one cup of water. Stir into bubbling chili and continue stirring to prevent sticking. Cook 5 mins more for consistency. Serves 12 ENJOY
